Jon – Managing Director
I joined the company in August 2023, and have worked in hospitality for over 30 years.
The best part of my job is interacting with our guests and working in a great team providing the best customer experience.
I am originally from Appley Bridge, Wigan and moved to North Wales in 2011 for a 6-month work contract. During this time I met my now wife, and I settled down in Caernarfon, where I still live with our 3 children.
In my spare time, I enjoy attending a local gym a few times a week, weight-lifting.
I enjoy spending time with my family, going on trips and day outs locally, and travelling abroad. I have a bucket list of destinations I am in the process of ticking off.

Wayne – Head Chef
Hi, I’m Wayne, your Head Chef. I take pride in being an Anglesey local, born and bred. During my career I have had the opportunity of being taught and inspired by talented chefs from around the world.
Whilst working at the SMH I’ve achieved our first AA Rosette award, which I am very proud of; my focus now is a second Rosette for 2024-25. I am committed to perfection and creativity with my team in the kitchen, ensuring the menu offers something for everyone.
Sourcing and using local, seasonal produce from local suppliers is a passion of mine, and I enjoy using the best ingredients to prepare dishes that are always fresh.
I am always looking for ideas and ways in which we, at SMH, can help and contribute in our community.
I cherish the simple joys of Anglesey life; walking the coastal paths and beaches with my family to gardening, baking, foraging, and building memories.
